Tasty Tuesdays ~ Greek Style Chicken Kabobs

When it comes food I love, I’m a copycat, I’ll  keep trying to duplicate it until I get it just right.  This recipe below is not a traditional Greek recipe but rather it’s Greek inspired. To be honest it’s actually my go to recipe for chicken. It’s a hit every time, whether I’m cooking for 4 or for guests.  Make a side of Greek potatoes, rice and salad and viola…a full Greek inspired meal ready to satisfy just about anyone!

GREEK STYLE CHICKEN KABOBS
Greek Chicken Skewers

Serving: 6-8 Skewers 
Prep time: 5 minutes (exc. marinating time)
Total time: 35 min

Ingredients:

5-6 Chicken breast, cut into cubes 
1 tbsp olive oil
1 tbsp Dijon mustard
2 tsp red wine vinegar
Juice of 1 small lemon
1 tsp oregano
¼ tsp salt
¼ tsp black pepper
¼ tsp paprika
2 cloves garlic, crushed (or 1 tsp garlic powder)
Fresh finely chopped parsley (optional)

Directions:

1. Cut chicken breast into cubes, set aside
2. In a large bowl mix all ingredients
3. Add chicken to mixture and let it marinade in the fridge for at least 30 minutes ( if you have time, the longer it rests the better it tastes)
4. Preheat grill
5. Using metal skewers ( or wooden if you prefer) add 6-7 pieces to each skewer, making sure they are close together. When skewering meat for the grill you want to make sure that your meat is at the top end of the skewer only leaving about an inch from the top. 
6. Grill on each side for about 7 minutes, to get nice grill marks.
7. Place on your top rack of the grill for another 7-9 minutes ( with lid closed) this will finish the cooking process with the indirect heat. Check to make sure your chicken is fully cooked. If you don’t have a top rack, lower your grill temp or close one side of the grill and place chicken on the side that is off and turn the other side on med/high. The point is to have indirect heat, this will lock in the juices of the chicken. You will have perfectly moist chicken every time!
