Most people who know me, know that if there is something I can make myself I make it! Granola is one of those things that when you pick it up at the store and read the label I get alarmed at the amount of sugar and fat content used, most of all I can’t understand or pronounce 75% of the ingredients. Since my kids love granola for their breakfast “parfaits” I set out to make my own. With a few failed attempts I mastered this one that we all love!
Homemade Granola
Ingredients:
2 cups quick oats
1/4 cup dried cranberries
1/2 cup chopped almonds
1 tbsp flaxseeds
1/4 cup butter
1/4 cup coconut butter
1/4 cup honey
1/4 cup brown sugar
In a small sauce pan melt butter, coconut butter, honey and sugar
In a large bowl mix oats, flaxseeds almonds and cranberries. Poor liquid mix over oats and stir until combined
Line a baking sheet with parchment paper, light spray with pan. Bake at 300 for 20-30min, make sure to check at the 15min mark, because granola burns quickly. Let cool and enjoy! Store in airtight container or zip lock bag.
