For starters, I love fish but I find fish with kids is hit or miss. Not sure about you, but I have one kid who loves fish and seafood and would choose fish over meat any day. Then, I have one kid who hates it, well most of them with the exception of one. Last summer in Aruba he discovered Mahi Mahi. The great thing about Mahi Mahi is that is’s a meaty fish without the ‘fishy’ taste.
So in my attempt to duplicate the the delicious flavors of Aruba, I came up with this recipe. It is by far my favorite grilled fish dish and it’s a hit with both my boys!!! The sweetness of the pineapple makes the perfect compliment with Mahi Mahi.
Grilled Mahi Mahi
Topped with Pineapple Mango Salsa

Ingredients:
4-6 fillets of Mahi Mahi ( We buy them at Costco. They are frozen in individual packs. A bag costs $22)
2 cups pineapple, diced small ( about 2/3 of a whole pineapple)
1 cup mango, diced small ( about 1 large whole mango)
¼ cup red onion, finely chopped
½ cup cucumber, chopped small
¼ tsp cayenne pepper ( optional)
2 tsp red wine vinegar
1 tbsp olive oil
1 tbsp fresh lemon juice
1/8 tbsp chopped parsley (or cilantro)
Salt and pepper to taste
Directions:
1) Preheat and grease your grill
2) Season mahi mahi with salt and pepper and set aside
3) The pineapple and mango salsa can be made ahead of time. Once the pineapple, mango and all other ingredients are chopped, mix in a bowl with vinegar, oil and lemon juice, salt, pepper and cayenne. Mix well and let it rest as you grill your fish
4) Place Mahi Mahi on grill and cook for 4-6 minutes on each until or until fish can flake easily.
5) Serve with pineapple and mango salsa on top
