I classify two things that are good for the soul; the first is shopping, because let’s face it, what woman doesn’t love a new kick ass pair of shoes and the second is baking. I thought of this last night as I quickly whipped up a batch of cookies and watched my kids stand in front of the oven looking through the little glass waiting for the timer to ping. What better thing can there be than eating a freshly baked cookie and licking chocolate off your fingers with your kids! If there is one smell I love most in this world, its cookies baking in the oven, it literally warms my insides and it just makes me happy. So for today, I’m sharing with you my personal favorite recipe; Oatmeal Chocolate Chip Cookies.
Ingredients:
1 cup all purpose flour
1 cup quick oats
½ cup brown sugar or coconut sugar
½ cup unsalted butter, melted
1 egg
1tsp pure vanilla extract
1 tsp baking soda
¼ tsp cinnamon
1/3 cup semi sweet chocolate chips
Pinch of salt
Directions:
Preheat oven to 375
- Line 2 baking sheets with parchment paper
- In a bowl, mix flour, oats, baking soda, salt and cinnamon
- In your stand mixer ( or it can be done with a whisk or hand blender in a separate bowl), blend sugar, egg, vanilla and butter until well combined and smooth
- As you continue to blend add your flour mix until well combined
- Fold in chocolate chips with a spatula ( feel free to add more chocolate chips)
- Using a tablespoon, drop cookies on baking sheet. I like my cookies to look rustic so I don’t roll them, I just scoop and drop, probably the size of a ping pong ball. This recipe makes me exactly 19 cookies every time
- Bake at 375 for 8-9 minutes, cookies will still look a little wet but they are done, you do not want to overcook them or they won’t be chewy.
