Tasty Tuesdays ~ Tomato Pork Chops

This is a juicy way to spice up your plain pork chops. You can even try the tomato sauce on other proteins too. Did you know that the beta-carotene found in tomatoes help protect skin from sun damage?

TOMATO PORK CHOPS

Ingredients:

4 pork chops
1 tbsp olive oil
Salt, Pepper and Paprika, to taste

Directions for Pork Chops:

1. Heat olive oil on medium high heat in a frying pan. Sprinkle each pork chop with salt, pepper and paprika.

2. Place the pork chops in the pan and cook for 3.5 minutes per side.

3. Set aside and let rest for 5 minutes.

Ingredients:

1 can 796 ml, whole plum tomatoes, crushed and drained
1 tsp garlic, chopped
1/2 tsp basil
1/2 tsp oregano
3 tsp olive oil
1 small onion, chopped
Salt and Pepper, to taste

Directions for Tomato Sauce:

1. Chop the onion and set aside.

2. Crush and drain the tomatoes. Add the remaining ingredients, except the onions.

3. Saute the onions on medium heat till soft, about 5 minutes.

4. Add the tomato mixture and lower heat.

5. Let simmer for 10 minutes.

6. Place over pork chops and enjoy.
