Tasty Tuesdays ~ Twice Baked Potato

Hello Chic Mammas,

Today Melissa from The Mutts Kitchen is serving up twice baked potatoes.

I love the creamy taste of a twice baked potato. It is like mashed potatoes married a baked potato, Mmmmmmm yum!

This recipe can be adapted to how your family would like it. We love bacon in our house, so mine are loaded with bacon. You could add green onions or extra cheese. Use this recipe as a stepping stone to a yummy twice baked potato.

TWICE BAKED POTATO

Ingredients:

3 large baking potatoes
6 slices bacon, chopped
1 tbsp butter
1/2 cup sour cream
1/2 cup mozzarella, shredded
salt and pepper, to taste

Directions:

Preheat oven to 400

1. Wash potatoes and wrap in foil. Place in the oven for 60 minutes on a cookie sheet.

2. Once done, remove from the oven and set aside to cool. Set the oven to 375.

3. While the potatoes are cooling, chop up the bacon and fry on medium heat for approx. 5 minutes. Once complete, place on a paper towel lined plate to drain excess fat.

5. Unwrap your potatoes and cut in half, length ways. Hollow out each piece, leaving a small amount of potato behind to hold the shell shape.

6. Place the insides in a bowl and smash up with a spoon or mashed if desired. Add butter and mix till melted in.

7. Next add sour cream and mozzarella and mix well. Add salt and pepper, if desired, and bacon pieces and mix everything all together.

8. Scope the mixture evenly back into the potato shells and place in the oven for 10 minutes. Place under the broiler for a few minutes for some colour if desired.
