Tasty Tuesdays ~ Cheesy Garlic Bread

Hello Chic Mammas,

Today Melissa from The Mutts Kitchen is serving up cheesy garlic “bread”.

Once again I am bringing you a low carb diabetic friendly alternative. I love garlic bread. I mean I really love it. I could eat a whole loaf if you let me, but my blood sugar would sky rocket. I had to come up with a way to make my bread and enjoy it too, and this is how.

Not only can this recipe be used for garlic bread, but you could use it as the crust to a pizza. I challenge you to try it out and see how you like it. Stay tuned for more yummy recipes coming to The Mutts Kitchen this month.

CHESSY GARLIC BREAD

Ingredients:

1 head cauliflower, finely chopped
1 egg
1 tsp garlic, chopped
2 cup mozzarella, shredded
salt and pepper, to taste

Directions:

Preheat oven to 350

1. Wash and finely chop the cauliflower. I prefer to use my food processor for this step.

2. In a large bowl add the cauliflower and place in the microwave for 8 minutes, mixing half way through.

3. Allow the cauliflower to cool for approximately 5 minutes and place into a tea towel. Squeeze the towel over a sink to remove liquid from the cauliflower.

4. In a small bowl beat one egg, add garlic, 1 cup mozzarella and salt and pepper if desired.

5. Place the squeezed cauliflower back in the large bowl and add the contains of the small bowl. Mix to combine all ingredients together.

6. Line a pan with parchment paper and spray with oil if desired. Spread mixture on pan and mold into a rectangle. Dab with towel as it may still be damp.

7. Place in the oven for 20 minutes. Remove from the oven and flip over.

8. Cover the “bread” with the remaining cheese and place back in the oven for 5 minutes. If desired, broil for 30 seconds to a minute till the cheese begins to turn golden brown.

9. Allow to cool to make cutting into sticks easier and serve with marinara sauce.
