Tasty Tuesdays ~ Veggie Bake

It’s time to say goodbye to summer (even though we never said hello!!) and bring on fall and all the wonderful harvest flavors fall has to offer! I think my oven has missed roasting my veggies. My favorite time of year is fall for so many different reasons, mainly because I get to cook and bake all my favorite things. Its harvest season and time for comforting soul food. I’m sharing with you all one of my favorite fall dishes.

VEGGIE BAKE

Serving: 6-8
Preptime: 10min
Total time: 1hr

Ingredients:

2 sweet potatoes, cleaned, peeled and diced
2 large zucchini, diced
2-3 cups mushrooms (any kind), diced or cut in half (depending on size)
1 yellow or orange pepper, seeds removed and diced
1 red onion, diced
2 cups diced butternut squash
2 garlic cloves, finely chopped
2 tbsp olive oil
1tbsp balsamic vinegar
¼ tsp dried oregano
¼ tsp paprika
salt & pepper to taste

Directions:

Preheat oven to 375

1. Wash and dice all your vegetables and place in a large bowl
2. Mix well with all other ingredients
3. On a large baking sheet place vegetables on sheet, ensuring that they are all laying flat
4) Bake for about 45-1hr or until veggies are caramelized and roasted to your liking. Only stir at the ½ mark.
