It’s the most wonderful time of the year!! Kids are back to school, and moms around the world are doing their happy dance right now. I’m not sure about you, but for me, back to school means preparing dinner under 30 minutes during the week. My days look like this: work, pick up kids from after school care, home, prepare dinner, start home work, eat dinner, homework, sports, home, shower time, put kids to bed ( this rings a bell right? Lol). Anyway, the last thing I want to do, is spend hours cooking dinner and of course anything I can do to avoid a drive through is a bonus!
Here is one of my go to dinners that is probably #1 on my kids’ lists! Why I love it so much is because I can prep the night before, by getting all the toppings ready if I know I’m really going to be crunched for time that day or I just make it right on the spot, either or it’s on your table in less than 30 minutes. Another reason why I love it, is because it’s healthy and I don’t’ have to worry about a well balanced meal, every food group is covered and stuffed in a beautiful tortilla or lettuce shell! How easy is that!!!!

Ingredients Taco Meat:
1 pk ground turkey
1 tbsp olive oil
1 small yellow onion, diced
1 glove garlic, crushed
1 tsp chili powder
¼ cup salsa
Salt/pepper to taste
Ingredients Honey Lime Cilantro Sauce:
1 cup fat free plain Greek
juice of 1 whole lime
1 glove of garlic crushed
1 tbsp of honey
1 tsp of olive oil
about 8 leaves of fresh cilantro
pinch of cayenne pepper
pinch of salt and black pepper
Directions:
1. Using a blender, blend all the ingredients for the cilantro honey lime sauce and set in the fridge
2. Sautee onions, garlic and olive oil until onions begin to sweat, add ground meat and cook for about 5 minutes
3. Add all other ingredients and cook until turkey is fully cooked and all liquid has absorbed
4. Serve with soft or hard tortilla shells or with lettuce leaves and top with your favorite taco toppings
