Today Melissa from The Mutts Kitchen is serving up chickpea salad.
This salad can be a side dish or as a main dish. It is full of fiber and a great vegetarian dish. Legumes are also a great source of protein and sure to fill your belly. Even your little ones will enjoy it too.
As I prepared this, I had my son on the counter “helping me”. He kept saying “me do” or “my turn to mix”. Really all he did was eat the chickpeas right out of the bowl, lol. Encouraging your kids to help in the kitchen will increase the chance of them trying something new and healthy.
CHICKPEA SALAD
Ingredients:
1 can chickpeas
1 cucumber, peeled, seeded and chopped
1 pint grape tomatoes, quartered
2 tbsp lemon juice, juice of half a lemon
2 1/2 tbsp olive oil
salt and pepper, to taste
Directions:
1. Drain and rinse the can of chickpeas and place in a large bowl. Add the chopped tomatoes and cucumbers to the bowl.
2. In a small bowl add the lemon juice, olive oil, salt and pepper.
3. Add the dressing to the large bowl and toss.
