Who’s as excited as I am that the weather is finally getting nice? My favorite part of this time of year is FOOD, but most all is there anything better (and quicker) than grilling your favorite veggies, meat, fish or pizza on your bbq? Nope…nothing is better than that!
This past week on The Mutts Kitchen we featured our favorite burger recipes to kick off the grilling season and since we couldn’t decide which one to share with all you Chic Mamma’s we are sharing all 3 to give you the perfect trio! Beef, Veggie and Turkey burgers!
Burger-nator (by Ashley)
Ingredients:
2-3 lbs fresh extra lean ground beef
1 onion, quartered
1-2 garlic cloves
3 tbsp olive oil
1 tbsp pimenta mouida (pepper paste)
1 ½ tsp sea salt
1 ½ tsp black pepper
3 tsp dried oregano
1 tbsp paprika
1 tbsp parsley, fresh or dried
2 onions, sliced
2-3 tbsp hot sauce
8 oz mushrooms, sliced
11 oz spinach, washed
1 tsp garlic, minced (optional)
1/4 tsp chili pepper flakes (optional)
olive oil, sauté vegetables
8 burger buns
8 cheddar cheese, slices
Directions:
1. Sautee sliced onions and mushrooms in separate pans over olive oil.
2. When onions become translucent add hot sauce and sauté for a couple of minutes. Set aside.
3. Drizzle a heated pan with olive oil; add garlic, pepper flakes, and spinach. Sauté until the spinach begins to wilt. Set aside.
4. In a processor, add onion, garlic, olive oil, parsley, pimenta mouida and blend until onion is finely chopped.
5. Add ground beef and blend for a couple of minutes. Open and add the spices (salt, black pepper, oregano, paprika, and parsley). Blend/pulse until well incorporated.
6. Preheat grill.
7. Remove the blade and bowl from the food processor. Scoop out handfuls of ground beef mixture and shape using a burger press or your hands.
8. Grill burgers for approximately 2-5 minutes on each side. Toast burger buns on the grill.
9. Assemble by stacking your burger in the following order: Bottom bun slice, patty, cheese, spinach, onion, mushroom, top bun slice.
This burger is great for a vegetarian or something to try on meatless Monday. Try using Denise’s Balsamic Grilled Veggies recipe to marinate the veggies.
Grilled Portobello Burgers ( By Melissa)
Ingredients:
4 large portobello mushrooms
2 large zucchinis
1 medium eggplant
any other vegetables you would like to add
Directions:
Preheat grill to medium heat
1. Wash and slice the vegetables. Leave the mushrooms whole. *
2. Marinate the vegetables using Denise’s Balsamic Grilled Veggies recipe.
3. Grill for 12 – 15 minutes, flipping once.
*To prep the mushrooms, do not place under running water. Use a damp cloth to brush away any dirt and cut off the stem. Remove the dark brown inside of the mushroom using a spoon.
Homemade Turkey Burgers (by Denise)
Ingredients:
1.5 lbs lean ground turkey
1 tbsp bread crumbs
1 tsp olive oil
½ tsp Cajun/creole seasoning ( you can substitute with chili powder if you prefer )
1 tbsp Dijon mustard
Pinch salt & black pepper
Directions:
Preheat your grill (or if in oven, preheat at 400 degrees)
1. If you are baking it in the oven, line a baking sheet with parchment paper and set aside
2. Mix all ingredients together and form into patties. I usually make a large meatball and then pat it down in a circle to the thickness that my family likes. Usually ¼ inch.
3. Place on hot grills ( to prevent sticking, make sure you grills are fully preheated and lightly coated/greased) , Cook about 7-8 minutes on each side (depending on thickness)
4. If baking in the oven, bake for about 18-20 min until it becomes golden brown.
5. Top it with your favorite dressings. My favorite is tomatoes, avocado, tzatziki and sriracha
