Tasty Tuesdays ~ Breakfast, Lunch, and Dinner Waffle

1185994_633623310042746_1984374682_nAs I was preparing my marinated chicken drums for the oven, I received a call from my hubby…”What are you making for dinner tonight?” He asks. “Well, I was just about to bake some chicken.” I reply. “Can we please have some waffles tonight?” He asks. Chicken goes back into the fridge, and waffles it was.

After a few “meh” attempts at homemade waffle batter, I was able to create this tried, tested, and true recipe. My Waring Pro double sided waffle machine makes them pretty quickly, and clean up is a cinch. Just my thing!

If you are looking for a great waffle maker, I highly recommend it. I bought mine recently at Bed Bath and Beyond for $87.99 including a 10% savings coupon (for enrolling to their email subscription). Retail price was $120.

I love waffles, and I’m sure you will too. You won’t want to settle for store bought after trying these.

BREAKFAST, LUNCH AND DINNER WAFFLES!

Serves: 5-6
Prep time: 15 minutes
Total time: 35 minutes (varies with waffle maker)

Waffles are usually on our weekend breakfast menu, but don’t be fooled…we have had them for lunch, dinner and as a snack too. Toss up a fruit salad, add a scoop of frozen yogurt, drizzle caramel/chocolate/strawberry sauce, add some nuts and there you have it. You will have a favourite on your hands, promise!

Ingredients:

2 cups all purpose flour, or 1 cup milled oats and 1 cup all purpose flour
2 1/4 tsp baking powder
1/4 cup sugar
1/2 tsp salt
3 large eggs, yolks and whites separated
2 cups milk
1 tsp vanilla extract,
1 tbsp vanilla flavoured coffee creamer
1/2 cup oil/fat (vegetable, corn, canola, butter or coconut butter melted)
1 pint blueberries, washed
1 pint blackberries, washed
1 pint raspberries, washed
2 cups strawberries, washed and halved
1 kiwi, skin removed and sliced
1 banana, sliced
100% maple syrup
4 tbsp Nutella
Whipped cream

Directions:

1. In a stand mixer using the whisk attachment, beat eggs until stiff peaks form. Remove and add to a bowl.
2. Preheat your waffle maker.
3. Add the milk into a pourable measuring cup, with yolks, vanilla extract and coffee creamer.
4. In the stand mixer bowl (you don’t need to clean it), add the dry ingredients and mix with the paddle attachment.
5. Pour wet ingredient (except the oil) into the mixer bowl and mix on low to medium speed.
6. Slowly add the oil/fat. Continue to beat until no lumps are visible.
7. Remove bowl and fold the egg whites into the batter. Your mixture will be fluffy and slightly thickened.
8. Add your batter to the waffle maker as per directions.
9. Toss the fruit into a bowl.
10. Spoon Nutella into a small ziplock bag, (using it as a piping bag) and snip the corner.
11. Assemble your waffle as follows; waffle, fruit, maple syrup, whipped cream swirl, and Nutella drizzled on top.

Tip: Keep your waffles heated in a 170 degree oven on a tray until ready to dress and serve. You will avoid them from getting soggy by doing so.

You may also freeze them in a ziplock bag for another time. Throw them in a microwave for a few seconds or into a toaster for a busy morning or a late night snack.
